These flavoursome Sweetcorn and Sweet Potato Frittatas are loaded with the right stuff to promote recovery and optimal health.

Replenish your energy levels with healthy, nutrient-rich carbohydrates from the sweet potato and sweetcorn, plus a hit of protein from the eggs.

Prepare the mix in advance and store in the fridge so you can return from your workout and cook immediately.

Ingredients

  • 1 potato
  • 1 small sweet potato
  • 1 small onion, peeled
  • Large pinch salt
  • Tin of sweetcorn
  • 5 eggs
  • 3 tbsps chickpea (gram) or plain flour
  • 25g fresh coriander, finely chopped
  • 1 tsp cumin seeds
  • 1 red chilli, finely chopped
  • 2 tbsps rapeseed oil

Methods

  • Step 1

    Grate the sweet potato, onion and potato. Put in a colander with a large pinch of salt and leave to drain over the sink or a bowl for 30mins. sweet-potato-grated

  • Step 2

    In a large bowl, combine the flour, sweetcorn, eggs, coriander and cumin seeds, then beat with a fork until mixed.  egg-added-to-mixture    

  • Step 3

    Squeeze as much liquid as you can from the potato mixture – press down hard into the colander with your hands, or wrap the mix in a clean tea towel and squeeze out the juice. Add to the egg mixture. Season and stir well. frittata-mix-combined  

  • Step 4

    Heat the oil in a large, non-stick frying pan. Lower 1 tbsp of the mix into the hot oil to make a ‘patty’. Cook 3-4 at a time, depending on your pan size. Fry for about 3mins each side, until golden. Keep warm in the oven until all the mixture is used. Sprinkle over the chilli and serve. sweetcorn-sweet-potato-frittatas
