Sesame-crusted tofu on avo toast

Sesame-crusted tofu on avocado toast is a fantastic option for vegans or if you’re simply trying to lead a more plant-based diet.

Made from soy beans, tofu is a great source of protein, as well as calcium, manganese and selenium.

We all love this as a post-workout brunch for muscle recovery and bone health.

Ingredients

  • 225g block smoked tofu, cut into 2cm thick slices
  • 3 tbsps sesame seeds
  • 1 tsp sesame oil
  • 1 tbsp tahini
  • 1 tbsp soy sauce
  • 1 tsp ground turmeric
  • 1 tsp black pepper
  • 1 small garlic, crushed
  • 1 tsp cornflour
  • Juice of lime
  • 1 large ripe avocado (or 2 small)
  • 1/2 red onion, finely diced
  • 1 tomato, finely chopped
  • 1 green chilli, finely chopped
  • 2 limes – 1 for juice; 1 cut into wedges
  • 1 tbsp coconut oil
  • 2 tbsps fresh coriander, chopped
  • 2 slices sourdough, toasted

Methods

  • Step 1

    In a bowl combine the sesame seeds with the tahini, soy sauce, turmeric, pepper, garlic, cornflour and lime juice. Add a little water to form a thick paste.  seasame-seeds-mix

  • Step 2

    Pat the tofu dry with kitchen towel and dip the tofu slices in the paste so they’re well-coated.  tofu-paste

  • Step 3

    Make the guacamole-style avocado. Halve the avocado, remove the stone and scoop out the flesh. On a board, mash roughly with a fork, then mash in the onion, tomato, green chilli and coriander. Transfer to a bowl, add lime juice and season.  guacamole

  • Step 4

    Heat a frying pan, add the coconut oil and carefully fry the tofu for a few minutes each side until crispy all over. Toast your bread. Spread the guacamole on the toast and top with the hot tofu. tofu-avo-toast  

Mix it up! Three more marinades Add more spice Make a chipotle sauce with 1/2 tsp cumin and garlic powder, 1 tbsp chipotle paste, 1/2 tbsp tomato purée, juice of 1/2 a lime and 1 tbsp olive oil. African twist 1 tbsp olive oil, 1 tbsp finely-chopped dried apricots, 1-2 tsps berbere spice, 1 tbsp finely chopped peanuts, salt and pepper. Tandoori style 2 tbsps yoghurt, juice of 1/2 lemon, 1 tsp crushed garlic, 1 tsp grated ginger, 1/2 tsp turmeric, ground cumin, coriander, paprika, black pepper.
