Ingredients

  • 100g dried figs, chopped
  • 150g dates, chopped
  • 280g mixed nuts, eg. mix of brazils, walnuts, pecans
  • 3 vanilla extract
  • 1 egg white
  • 1tsp ground ginger
  • 1tsp ground cinnamon
  • 1 lemon zest
  • 1 salt
  • cooking spray or butter, to grease the pan

Methods

  • Step 1

    Preheat the oven to 180 °. Blitz the nuts in a food processor. Add the dried fruit, vanilla, egg white, ginger, lemon zest, salt and blitz again to combine.

  • Step 2

    Line a cupcake tray with pieces of parchment paper and spray with cooking spray or grease with butter. Press the nut mixture into each section.

  • Step 3

    Bake for 15-20mins. Watch like a hawk as you don’t want the nuts to burn! Allow the bites to cool for 5mins, then transfer to a wire rack to cool.
