Tri Bike / Road Bike

I have a Quintana Roo Tequilo size 58, Its a bit big for me as a TT / Tri bike so I have reduced the stem lenghth from 120mm to 60mm. It seems to fit fine now. My other bike ( Training ) is a Trek 1000 size 58 and would seem to be the correct size for me.
I am thinking of changing the QRoo into a road bike ( new bars and STI's ).

Will this work as a road bike ?
Will there be any disadvantage to the Tri Geometry ?
Do you see any other problems in doing this ?

Well Chrissie Wellington originally rode her Cervelo P2C with road bars and in fact I am doing the same thing in building a road bike using the frame off my Focus Izalco.
